I haven't done any FB development yet but have looked in to FB, Iphone and Xbox game programming.

To code for the IPhone the SDK will only install on a mac so this is out for me.

For Facebook most of the games are either in HTML/ASP or Flash with Action Script depending on the complexity of the game. It is then linked in to Facebook through the Facebook API.

I went for the option of coding the the Xbox using C# with the XNA framework which so far is quite easy to work with but does require a subscription to test games on the xbox or publish for the xbox.
